Zaalouk salad

I propose a Moroccan salad made, eggplant appointed to the Zaalouk Morocco.

This is an easy to prepare.

Ingredients: (4 people)

  • 4 pieces of eggplant
  • 2 pieces of tomatoes
  • 3 cloves of garlic
  • 1 tbsp chopped parsley
  • 1 tbsp chopped coriander
  • 1 tsp olive oil
  • ½ lemon confit
  • Salt
  • Pepper
  • Paprika
  • Cumin

Preparation Methods:

  1. Wash and cut the aubergines into slices, grill the eggplant slices.
  2. Cut the eggplant into cubes.
  3. In a skillet heat the olive oil and add the crushed tomatoes.
  4. Add salt, pepper, paprika, cumin, coriander and parsley, and cook 5 minutes.
  5. Serve your Zaalouk salad with black olives and lemon confit.
